This is one of my all time favorite desserts to bring to a BBQ because it’s SO EASY and always a hit!
Years ago, I picked up an Albertsons coupon and recipe book and happened to hang onto it. Then one day, I stumbled upon the book and discovered this wonderful recipe. Since I brought it to one family get together about a year ago, it’s become a favorite! I have since made it several times and even experimented with some variations. This recipe reminds me a lighter cheesecake and it’s so fresh with the strawberries cut up on top!
Here’s the original recipe, with my substitutions included:
Easy No Bake Strawberry Cream Pie
1 frozen deep dish pie crust (I prefer a ready-made graham cracker crust)
1/2 8 oz. package of cream cheese, softened (I use light to try and cut out some of the fat)
1/4 cup granulated sugar
1/4 teaspoon vanilla extract
1/2 8 oz. container frozen whipped topping, thawed (I use fat free to also try and reduce the fat and calorie content)
1 16 oz. container of fresh strawberries
Prepare the pie crust as necessary. If it needs to be baked, let it cool before preparing the rest of the pie. In a medium mixing bowl, combine cream cheese, sugar, and vanilla until well combined and smooth.
Add in the whipped topping and continue mixing until well combined and fluffy. Spread the mixture into your pie crust.
Top with strawberries cut side down. Refrigerate until ready to serve (approximately one hour).
Another variation of this pie I like to do is use an Oreo® or chocolate cookie crust and top with raspberries in place of strawberries! Or keep the graham cracker crust and use both strawberries and raspberries on top. Another time I even sliced up strawberries and threw them into the pie mix as well. For a baby shower, I also made a variation of it where I made a graham cracker crust from scratch and put it into a mini muffin tin to bake and then topped with a dollop of the filling and a strawberry. No matter how you serve it, it turns out delicious. 🙂
