A few days ago, I threw together a marinade and let the chicken breasts soak! When the sun came out, it was time to get cookin’.
Today I made brown sugar bourbon BBQ chicken breasts, mashed red potatoes (dairy free), garlic seasoned corn on the cob, sourdough bread with garlic herb butter and, of course, a mixed green salad!
For the chicken, I use Mesquite Marinades (there is one called Brown Sugar Bourbon) with a recipe on the back of the packet. For the mashed potatoes, I use red mashed potatoes, soy sour cream, butter, salt, pepper, and minced garlic. The corn on the cob is rubbed with butter before going on the BBQ and then I shake garlic salt, kosher salt, and pepper on it, wrap it in foil and put in on the BBQ for about 20 minutes. The rest is pretty self explanatory. 🙂
I was very excited to BBQ and my eyes were much bigger than my stomach. Regardless, it was delish. There’s nothing really that exciting about this meal except that I love BBQ season and taking pictures of the food I’ve made when it looks yummy. 🙂
